o ya is chef Tim Cushman and Nancy Cushman's Japanese-inspired restaurant on East Street, and it serves one thing: a nightly chef's-choice tasting menu of nigiri, sashimi and cooked dishes that changes daily with the season. Tim Cushman won the James Beard Award for Best Chef: Northeast in 2012 for o ya, and the restaurant was a 2026 James Beard semifinalist for Outstanding Restaurant.
This is a planned splurge rather than a spontaneous dinner. Every seat is prepaid in advance, parties are small, and the meal is built for diners who want to hand the evening to the sushi chefs. The restaurant is on East Street in the Leather District.
The tasting menu
The kitchen writes the menu each day around the freshest seafood and produce. The restaurant says it may include oysters, salmon, yellowtail, bluefin tuna, wild prawns, sea urchin and fish roe, alongside eggs, chicken, pork, Wagyu beef or foie gras. There are omnivorous, pescatarian, vegetarian and vegan versions, chosen per guest when booking, and seasonal add-on dishes can be ordered on the night.
Counter or table
Counter seats are high stools with backs facing the sushi chefs; table seating runs along a single banquette the length of the dining room. You can request either, but the room is small and the restaurant does not guarantee a seat type.
What to drink
The list covers wine, sake, beer, Japanese whisky and shochu, by the glass or bottle. o ya holds a full liquor license but has no cocktail bar and carries few spirits, and bringing your own bottle is not allowed. Zero-proof beer, tea and soft drinks are available.
How booking works
Reservations are sold on Tock and paid in full up front, with a 20% administrative fee that covers service, so no further tip is expected for the tasting menu. Sales are final, but a reservation can be transferred to someone else through Tock.
